Quinoa Salad with Spring Greens
This delicious salad is rich in protein and fiber which helps to promote digestion and boost immunity
Cook quinoa in water and then let cool
Combine cooked quinoa with cherry tomatoes, cucumber, red onion, feta cheese, and herbs in a bowl.
Prepare dressing with lemon juice, olive oil, salt, and pepper
Pour dressing over the salad and toss to combine.
Adjust seasoning to taste.
Serve immediately or chill before serving!
Caregiver of the Quarter
We are pleased to announce that Cindy Birdsall has been selected to be the Assured Home Nursing Caregiver of the Quarter for the 1st Quarter of 2024.
Cindy has been a professional caregiver for 12.5 years. She has been a dedicated employee of Assured Home Nursing since 2014. Growing up, Cindy helped care for her Grandparents, Aunts, Uncles and then her own Parents. She went on to a professional career in something else for 26 years. After her company downsized, she had difficulty finding work in her field of expertise.
At this time, her friend who also needed help caring for her own Mother, suggested caregiving. This is where Cindy began her new career as a caregiver and has been doing it ever since.
Caregiving for Cindy starts with listening. She makes sure she is in tune to all her clients needs, wants and frustrations. This is what then guides her on how to best care for them. She also always gets to know the client’s loved one’s concerns as well. Listening helps her clients to feel valued and cared for.
Cindy’s passion is her God. She knows he has blessed her with a job she loves and the strength and wisdom to do her job and to do it extremely well. She appreciates knowing that her job helps people to remain in their own homes.
Outside of work, Cindy loves spending time with family and friends. She also enjoys reading and taking walks through nature.
